Here Comes Halloween: 3 Easy Recipes

Hello everyone,
it is time for another Halloween themed post. Today it is all about food! Now I know all you really want to do is devour an entire bowl of candy and maybe two or three toffee apples, but these three little recipe ideas are super fast, super tasty and super suited for this spooky season. So, take a bite out of these:
  • Pumpkin Spice Milkshake (vanilla ice cream, milk, half a teaspoon of ginger, cinnamon and a dash of nutmeg and a good tablespoon scoop of pumpkin puree)
    So, if you have a sweet tooth and desserts are more your thing, then this is so quick and easy for that pumpkin spice fix. All you need to do is take 2 or three scoops of vanilla ice cream, half a cup of milk and the rest of the ingredients listed above, and blend them together until smooth. In less than five minutes, you'll have a deliciously devilish milkshake.

  • Pumpkin Cheesecake Brownies (for the pumpkin part: 115g cream cheese, 3 tablespoons of caster sugar, 1 free range egg, 115g pumpkin puree, a pinch of cinnamon, ginger and nutmeg. For the brownie: chocolate chips, 120g butter, 100g plain flour, 230g dark chocolate, 3 free range eggs, 150g caster sugar)
    Mix all of the pumpkin ingredients together in a large bowl, making sure they are well combined. Then, in a separate bowl, mix the flour, caster sugar and the eggs. In a separate dish, melt the chocolate (you can do this over a pan but I did it in the microwave for one minute) and melt the butter in another separate bowl. Add the melted chocolate and butter to the flour mixture, folding everything together and making sure it is well mixed. (Don't do what I did and realise last minute you forgot to add the butter!). On a greased baking tray, pour the brownie mixture in, sprinkle in the chocolate chips. Then, with a table spoon, plop little drops of the pumpkin mix ontop of the mixture, then stir it around with the spoon, creating a marble like pattern. Bake for 40 minutes on 175 degrees.
  • Spooky Shaped Brownies (same brownie mix as above, minus the pumpkin)
    Once the brownie you've baked is cool, cut them into headstone and coffin shapes. With some coloured icing, decorate as spookily as you wish, making sure everyone has a treat this Halloween.
